Historical Development in Scotland

First written account in Scotland was in 1494 in the Scottish Exchequer Rolls, regarding John Cor, friar of the Benedictine order at Lindores Abbey in Fife. The account mentions 'aqua vitae' - the water of life.

Duty was first imposed in 1644 and since then the government has aimed to maximise revenue from the industry. High duty encouraged illict distillation.

The Wash Act 1784:

  • Split the High and Low lands and simplified regulations.
  • Low excise duty for small distillers in the north but they were banned from exporting to the south.
  • Lowland distillers were powerful, much of their product was shipped south for gin rectification.

Highlands (smaller scale) produced relatively high quality, esp. in the Glenlivet area, now Speyside. Also known for illicit distilling. Lairds turned a blind eye as this was often how tenants paid their rent.

1822/23 Illicit Distillation Act:

  • Reduced distill. license to make it more attractive to pay.
  • Number of licensed distilleries doubled by 1825 and the illegal trade decreased.
  • King George IV enjoyed Glenlivet (this was also a generic name for whisky from south Speyside).

Invention of the continuous still by Robert Stein revolutionised the industry. Two interconnected columns allowing for a higher volume of distill with increased consistency than tradtional copper pot stills. Irishman Aeneas Coffey refined it into the 'Coffey Still' (patented 1830).

1860 Act:

  • Made it illegal to vat/mix whiskies from the same distillery while 'under bond' (where you have not yet paid duty on the whisky, in order to bottle and then sell. The distillery would have to take it out of bond and pay duty on the whisky).
  • This increased exports.
  • Andrew Usher of Glenlivet distillery pioneered the blending of pot-still malt and patent-still grain whisky to create blended expressions, Usher's Old Vatted Glenlivet (OVG) (blended is more consistent than pot-still and easier to drink).
  • There were more overseas exports eg: Dewar Brothers, MacKinlay, John Walker, Mackies (eg: Whitehorse), Haig and William Grant.

By 1890s blending was dominated by John Walker & Sons (lowlands), John Dewar & Sons (highlands) and James Buchanan & Co. (low) = The Big Three (not Speyside). It was a good age for blended whisky production. There was the phylloxera insect ruining the grape harvests in France so cognac production was down.

1898 was the Pattison Crash. The Leith firm (port of Edin.) collapsed due to an over valuation of whisky and property, and the Scottish industry saw no new distilleries constructed for 50 years.

1900 the railway arrived to the N.E. of Scotland and Speyside became the heartland due to reliable, pure water supply, locally grown barley and peat deposits.

1903 'What is whisky?' case:

  • A London magistrate held up a complaint and two publicans were fined £100 for serving cheap whisky.
  • Decreed that whisky, grain or malt, had to be made in a pot still.
  • This split the industry into grain distillers and blenders vs. pot-still distillers of malt whisky.
  • Andrew Mackenzie, owner of Dalmore, declared superiority of the single malt (= the product of one distillery).

1915 Immature Spirits Act:

  • Compulsory 2 year maturation period in Scotland that was increased to 3 in 1916.
  • Improved quality and image of Scot. whisky as average age of component whiskies rose.
  • David Lloyd George (teetotaller) introduced this Act to decrease the trade but it did the opposite by making whisky a premium product.

1920-33 USA Prohibition:

  • Gave Scotch whisky a boost as it thrived in underground bars. Illegal imports were huge.
  • Scot whisky emerged as a better product while Irish suffered from boot leggers selling inferior spirits as Irish whiskey.
  • After Prohibition USA was Scot whisky's biggest market.

1939-45 WWII: all distilleries silent from 1942. Post-war Churchill supported the export industry and its need for barley.

Post WWII: Growth of USA market and American investment.

Neil McKerrow, father of Edin. Whis. Aca. founder, promoted the single malt as a premium product. He worked for Glenmorangie. 1st to recognise the importance of wood management and developed the 'cradle to the gave' philosophy of Glenmorangie casks. 1st to create 'wood finish range' (whisky is matured in one cask - normally bourbon or sherry - before spending some extra time maturing in a different cask - normally wine or port).

1980s+:

  • Single malt expanded out of Scotland due to promotion by Glenfiddich, Glenlivet, Glen Grant, Macallan and Glenmorangie.
  • Launch of Classic Malts by United Distillers, a great success, which encouraged other distillers to produce their own single malts.

Daftmill

Operating as a true farm distillery since 2005, Daftmill is owned and run by the Cuthbert family. The distillery only operates during the quieter seasons at the farm – mid-summer and winter; Though Daftmill began production in 2005, there was no garish press release or opening of a plush visitor centre. In fact, over the next decade Daftmill put zero effort into marketing at all, releasing nothing until the spirit was 12 years old. This may well be because their de facto “Head of Marketing” is also the sole distiller, farmer and is in fact the distillery owner. Daftmill is the only family-owned and -operated distillery currently releasing whisky and is a true farm distillery. The distillery is owned by brothers Francis and Iain Cuthbert, with Francis heading up the distillery. It is crucial, however, to note that the distillery is a secondary business to their farm. This means that Daftmill barely fills 100 casks per year – making it one of Scotland’s smallest distilleries. While this seasonal production cycle is today unique among distillers, it harks back to the 1800s, when farmers would produce whisky only a few months a year, often as a way to use up, preserve and add value to barley. Macallan

Prefer to use more traditional barley varieties. Golden Promise is used alone or in conjunction with another type. Use short, fat stills to create a rich whiskey aged in Spanish oak sherry butts.

In 1960s Macallan experimented with different sherry casks and favoured butts that contained dry oloroso sherry, for maturation of approx. 2 years. Imparts sultana, apricot and orange flavour. 1980s realised the sherry was less influencial than the wood itself and Macallan changed to constructing own barrels using Quercus robur oak from NW Spain.
